To 'condition' them, I usually run a couple of bowls of CH through 'em.....then anything really!

I smoke anything and everything through my clays. A clay is the proving ground for any new blend. And yes, placing them in a fire will clean them right out. The only downsides are: 1.) They are easily broken. 2.) The stem will naturally want to stick to your lips; especially if you are a clencher. Coat the tip with a bit of white beeswax for a more comfortable smoke. 3.) They tend to burn very hot. Be sure to sip slowly.
As to the matter of what to smoke? Why, Kickin' Chicken, of course!
