That is some sound advice, I'll definitely take it to heart. This is going to be an incredible adventure and I'm taking in every second of it. Thank you again for the great advice.

    Cheers Jp :puffy:

How times change!, at twenty I still had another year of my five year engineering apprenticeship to go - before I got full wages as a skilled tradesman. :)

I wish we had more proper apprenticeships in the culinary world in the US (like in France at least, if not Europe at large). Culinary schools just keep churning out people who think they're ready to be chefs... and only the smart few of us seem to know we have a long way to go yet!

On your original post, it sounds like your head is very much in the right place. With the loved ones back home, some friends at least here online, and pipes to keep you company I'm sure you can make it through this!

I don't know much about the culinary arts although I do love to cook. What I have noticed though is that apprenticeships in a whole seem to be a dieing breed. At least before there seemed to be an apprenticeship for everything, now with my generation there are many who don't appreciate the time and effort or what you can get out of such a program. They seem to just want to have a career now, and to get that they pay thousands and thousands of dollars to go a university; then come to find out they're still at the bottom and become in debt. On the other note thank you for your support as well, I've said it before; this community of pipers is an incredible group of educated individuals who can support each other in what ever endeavor they may face.Thank you friends.

Cheers and here's one for you Tony :toast:

If you're ever bored you can climb one of the many mountains in Kansas.
